Chicken n’ Waffles Date Night

A few Saturdays ago, our friends Yvonne and Will came over for a cook-out and magic night. We made homemade chicken n’ waffles and let me tell you – they were absolutely delicious! Apparently, Yvonne and Will were nervous to see me because they were aware of Akshay’s plan to propose, and feared they would accidentally spill the beans. Well, I’m glad they still came because we ended up having a fabulous night!

Since I have an obsession with charcuterie boards (Akshay’s note: obsession is putting it mildly), I stuffed everyone with some wine, prosciutto, cheese, and crackers. Afterwards, we began prepping for our cheddar cheese/green onion waffles and fried chicken. I really loved that this meal only took about an hour to prep/cook (Akshay’s note: yet she complains when she has to cook for 5 minutes when it’s just the two of us). Also, the amount of ingredients you use is really up to personal judgment (you better believe Akshay dumped all the cheese into our waffle mix). Below is the list of ingredients/ steps on what we did to cook our meal!

Ingredients:

stick of butter (number varies by servings)

eggs (number varies by servings)

vegetable oil

head of garlic

waffle mix (number varies by servings)

can of creamed corn

shredded parmesan cheese

shredded cheddar cheese

fresh parsley

fresh green onions

1.5-2 pounds of chicken breast

bread crumbs

Step 1: Combine waffle mix, eggs, butter, creamed corn, green onions, parsley, cheddar cheese into a mixing bowl. The waffle mix package should guide you on how many cups of mix, # of eggs, and tablespoons of butter you will need based on how many people will be enjoying.

Step 2: Heat a pan with butter and garlic. Then cut the chicken into small strips and dip them in the garlic butter you just whipped up, parmesan/cheddar cheese, and bread crumbs. Sprinkle parsley on top. Place in oven at about 350 degrees for about 20 minutes. See garlic cheddar chicken recipe for more detail.

Step 3: Heat the waffle pan and spray with olive oil, or butter. Pour about 1 scoop of batter onto the pan, close, and flip over. Luckily, the pan had a light that lets you know when it’s time to remove. There were a couple of instances in which I almost forgot to lock the waffle pan before flipping! Oops!

Step 4: Once the waffles are all cooked, place the fried chicken on top, and stick them in the oven for about 3-4 minutes under “broil.” This makes them nice and crispy. I recommend checking on it every couple minutes because they can burn easily.

Step 5: Douse in REAL maple syrup or honey, and ENJOY!!!!

We paired our gourmet meal with a tasty cocktail using Blood Orange San Pellegrino and vodka. After dinner, Will showed us some magic tricks and even shared a couple of secrets that we promised to take to the grave. I realized that I enjoy being a spectator  and will leave the magic to the real professionals!

Akshay and I don’t cook much (we just appreciate food a lot), and so it’s always a treat when our friends want to share their passion for cooking with us! Thank you Will and Yvonne for hanging out with us and preparing this yummy meal! Akshay and I ended up eating chicken n’ waffles for  our next 3 meals with all the leftovers :D.
